From the brand Giuseppe Giusti comes a time-honored balsamic vinegar crafted in Modena, Italy since 1605. Founded in 1605, Gran Deposito Acetaia Giusti has been perfecting the art of vinegar-making for 17 generations, focusing on quality, excellence, and their century-old family recipe.

Giusti carefully selects quality grapes, usually Lambrusco and Trebbiano varieties from Modena and Reggio Emilia, for their delicate concentration of sugars and acidity. The grapes are then pressed, and the juice is boiled into a thick, sweet syrup that ages in a wooden cask with the "Mother" vinegar.

The heart of Giusti's production is a collection of 600 casks dating back to the 1600s, where the purest extractions that create the unmistakable aroma of their balsamics are collected. Casks provide an intensity of wood essences and aromas, and the older the cask, the more complex the vinegar.
