Atlas Olive Oils has carefully approached all aspects of its organic olive oil production process by adopting sustainable procedures only. While enjoying Atlas, you are not only having an organic olive oil, but you are also doing your bit for the environment.
Our organic EVOO is naturally rich in polyphenols, particularly hydroxytyrosol. Due to the harsh environment of the desert (127°F during summer, rocky soil, roots cannot develop easily, lack of water), the olive trees are so stressed that a phenomenon of panic (survival instinct) occurs. This causes the olive trees to produce a huge quantity of polyphenols (antioxidants) to survive. The resulting olive oil contains an extraordinary hydroxytyrosol value.
We produce our organic EVOO of superior quality only from our own Organic Family Farms. Our oil is trusted by Michelin-starred chefs, and we represent one excellence of the culinary culture of Morocco.
Our production area is the Marrakech region, with an olive grove surface of 245 Hectares (605 acres) at an altitude of 390 meters above sea level. The soil properties are well-balanced, with 30% clay, 35% muddy/loamy, and 35% sandy (pH 8.34).
We use different pruning methods, including cutting the olive trees into cups for some orchards and into hedges for others. The density varies, with the old bicentenary orchard having 100 trees/Ha and the modern orchard having 1,852 trees/Ha.
Our production ranges from 25,000 Liters with a maximum acidity of 0.4° for the old bicentenary orchard to 450,000 Liters with a maximum acidity of 0.2° for the modern orchard (only extra virgin olive oil). The harvest time is from the end of September to the end of December, and the extraction is done through a 2-phase continuous system with a maximum temperature of 26°C (first cold pressed).
