The desert environment of the Atlas Mountains, characterized by extreme heat (up to 127°F during the summer), rocky soil, and limited water resources, stresses the olive trees to the point of a "panic" survival instinct. This causes the trees to produce a remarkable quantity of polyphenols (antioxidants), resulting in an extraordinary hydroxytyrosol value in the final olive oil.
Atlas Olive Oils has carefully approached all aspects of its organic EVOO production process, adopting sustainable procedures to ensure the quality and taste of their products. The company's olive groves include a bicentenary orchard with traditional Picholine du Languedoc, Picholine Marocaine, Menara, Haouzia, Chemlali, and Dahbia cultivars, as well as a modern orchard with Arbequina and Arbossana varieties.
Located in the Marrakech region, the olive groves cover 245 hectares (605 acres) at an altitude of 390 meters above sea level. The well-balanced soil composition, pruning methods, and planting densities are carefully managed to optimize olive production, which ranges from 25,000 liters in the bicentenary orchard to 450,000 liters in the modern orchard, all with a maximum acidity of 0.4% and 0.2%, respectively.
The olives are harvested from late September to late December and are cold-pressed using a two-phase continuous system, maintaining a temperature below 26°C. The resulting EVOO has a yield between 11.5% and 15% and is bottled in glass containers of 0.5, 0.75, and 1 liter.
